Ingredients

For the cake

  • 200g (1 ½ cup) of wholegrain flour
  • 125g (1 cup) of grained almonds
  • 2 tsp. of baking powder
  • ½ tsp. of soda
  • Pinch of salt
  • 125 ml (½ cup) of almond yogurt or plain yogurt
  • 125 ml (½ cup) of coconut oil
  • 125 ml  ½ cup of date syrup
  • 1 tsp of vanilla extract
  • 15 plums

For the almond spirinkle

  • 3 Tbsp. (45 g) of almond flakes
  • 1 Tbsp. of plant based butter
  • 1 Tbsp. of cane sugar

Instructions

  1. Preheat the oven to 180 °C (350°F). Grease and flour a 20 cm (8 inch) round cake pan
  2. Combine the flour, grained almonds, baking powder, soda and salt in a large bowl
  3. Combine the yogurt, oil, syrup and the extract in separate bowl
  4. Add the liquid mixture into the flour mixture, and stir carefully
  5. Spoon the mixture into the prepared cake pan
  6. cut the plums in half and lay them on top of the cake mixture facing the cut side up
  7. To make the almond sprinkle combine 3 Tbsp. of almond flakes and cane brown sugar
  8. Sprinkle the almond mixture all over the cake
  9. Bake for 45 minutes. The cake is ready when a toothpick inserted in the center of the cake comes out clean.
  10. Let the cake cool down before removing from the pan
